Enchildas Tonight

We are having my twin sister over tonight. We invited my brother and his wife to come also and we are going to have enchiladas for supper. That is a dish we always had when we lived in California. After we moved back here, there were no Mexican restaurants so my Mom made up her own enchiladas and had the sauce shipped from Texas for many years. That plant finally closed down and we had to find substitutes for the sauce. None have ever been quite like the original from Texas but we have good enchiladas just the same.
